Position Description

Oversees the entire culinary team and operations. Supervises all cooking operations including methods, portioning, and garnishing. Develops menus. Supervise culinary staff including hiring, developing, training, counseling, disciplining, discharge, and performance evaluations. Other duties include scheduling to adhere to labor standards and guidelines; ordering all food and equipment per specifications; ensuring attractive presentation of all food dishes; maintaining health and sanitation standards; achieving budgeted revenues and expenses and maximizing profitability related to the restaurant; increase levels of guest satisfaction by delivery of exceptional product through employee development; and managing in compliance with Federal, state, local and Driftwood/Marriott regulations and standards.
