Position Description

A great opportunity for an experienced SOUS CHEF!

 

This position will ensure the highest quality preparation and presentation of fine cuisine for Glenwild Golf Club and Spa Members and their guests.

 

Reporting directly to the Executive Chef, this successful Sous Chef will quickly amass an in-depth familiarity with the kitchen's operations so that they may fill in for the Executive Chef when needed and assist them in resolving any problems that may arise on the job.

 

Duties and Responsibilities

   Excellent cooking, supervisory and sanitation skills required.

   Proven working knowledge of Food and Beverage products, services and equipment

   Creative menu development skills

   Ability to propose, write, cost and implement high quality menus based on themed and seasonal availability and train team to execute them to the highest standards

   Daily supervision of all hourly kitchen staff

   Lead culinary team in absence of Executive Chef

   Naturally intuitive, must be able to manage and continue tasks without supervision

   Ability to work under pressure, in a tight timeframe

   Ordering and inventory experience

 

QUALIFICATIONS

   Degree in Culinary Arts preferred.

   Minimum three years of restaurant, resort or hotel experience and at least two years experience as a Sous Chef required.

   Banquet experience preferred.

   Able to work over 40 hours a week during peak times throughout the season. Ability to work any day of the week, including Saturdays, Sundays, and holidays.

   Authorization to work in the United States

   Ability to physically handle knives, pots, supplies & display items as well as grasp, lift & carry same from shelves & transport to every area of the kitchen/Club.

   Ability to perform cutting skills on work surfaces, topped with cutting boards, 3 to 4 feet in height. Must safely use and handle various kitchen machinery, including: knives, slicers, food processors, grinders, mixers, & other kitchen related equipment.

   Must hold a valid Food Safety/Food Handler's Permit.

   Knowledge of all stations Food Safety Certification required.

 

 

Will be required to perform a cooking test for the Executive Chef
